I would love to get some idea of how you use different fuits and veggies that you pick up from the local markets. We have been rather confined by North American cooking for the past year and would love some ideas on how to make the most of the wonderful abundance of produce we don’t see much of in the north.
Check out local cookbooks. There are many out there to choose from.
one of my favorite local foods is aracache, which is a root that you can buy already ground up. i learned how to prepare it from local tica, but i improved the recipe and now it’s one of my favorite foods.
saute a small chopped onion and two cloves of garlic in olive oil until transparent. add about a half tsp of achiote paste. add one previously boiled, peeled, and diced potato, and a finely chopped hot red chile, then add 500 grams of ground aracache, salt, pepper, and a half cup of chopped cilantro. stir for about 5 – 7 minutes, et voila! even my husband the chef loves this and he is the ultimate food snob.
